Mie Bakso Kuah (my Mum's Recipe)

Yesterday, i chatted with my best friend Joszef-from Hungary. We talk about Christmas. He asked me the special menu in my family to celebrate Christmas. So, I told him about a special menu in my family every Christmas. The menu is "Mie Bakso Kuah". Hahaha.. it's such a simple menu. Yes, but always be the special for my family. My Mum often cook this menu when we are home (my sister and I have leave home since a long time), especially on Christmas. We will eat "Mie Bakso Kuah" when back home after a Mass on Christmas Eve. It must be special.. a hot menu for the cool night near early morning. So, after my Mum passed away on July 2009 we very missed this special menu on our special day.. :(

Joszef has a talent in cooking. He is a best Chef for his family. Every time I told him about foods from Indonesia, he always ask me how to make it. I love this guy. So, i wrote for him the recipe of “Mie Bakso Kuah”, my Mum's recipe. I don't know, maybe it’s not practical… honestly i have difficulty to write it.. LOL.. :))

Broth/Mayo
nnaise:

  • Boil about 500 gr beef ribs with 2 liters of water and about 6-8 cloves garlic (crushed)
  • When the ribs are tender enough and issue stock, add some ground pepper, salt, and white sugar
  • Add “tongcai” (marinated vegetables, usually made from turnips, maybe you can find it in the chinese store) or if you can’t find it… substitute with slice green onion (about 2 stalks)
  • Put all meatballs into the broth and wait until boil again

Fill Materials:
  • Wet yellow noodles or other kind of noodles (boiled and separated)
  • Mustard greens (boiled and separated)
  • Fried meatballs
  • Tofu meatballs

Spice Supplement
  • Celery (sliced)
  • Shallots and garlics (fried)
  • Boiled sauce (sambal rebus) or you can substitute with chili ketchup
  • Sweet soya sauce

  4. Add the fried meatballs and tofu meatballs
  5. Pour the meatballs and broth - which had previously been boiled
  6. If you like, serve with the sweet soya sauce, boiled sauce, and tomato sauce
  7. Enjoying while hot…
We can find every kind of "bakso" (also tongcai ) at a C

  • Slam the dough a few times
  • Ready some boiling water
  • Make rounded meatballs, dip in boiling water, do it until they run out
  • Boil the water again until all meatballs float, then lift all and drain

How to make fried meatballs:

  • Minced until tender about 150 gr chicken and beef
  • Add egg yolk and wheat flour
  • Add spices: nutmeg powder, pepper powder, garlic (that has been fried and mashed)
  • Add oyster sauce and salt
  • Make rounded meatballs
  • Dip the dough balls in dyeing (rice flour, water and salt)
  • Fry in hot oil until golden brown, then remove and drain.

How to make tofu meatba
